Superb Omelet

Last night my friend Tamra came over and taught me how to make the perfect omelet. I had never known how so I decided to learn. I had always been so confused as to how they cook the eggs so well. Eggs always have been a scary thing for me to cook! so I would like to share my knowledge with you. So I am here to tell you Holli's (ok really Tamra's) step by step directions for the perfect omelet:

Step 1: Get together everything that you want ot put inside your omelet. Dice them up to the desired size of intake (Tamra Tip#1 when you have everything ready and on hand it helps to cut out the silly mistakes that happen to everyone).

Step 2: Turn on the stove so that the skillet is heating up (TT#2 Never put eggs in a cold skillet).

Step 3: put 3 eggs and about a 2 tablespoons of milk together in a bowl and whisk it all together until it is all the same consistency (TT#3 if in doubt use less milk... there is nothing worse than a runny omelet).

Step 4: spray skillet with non stick spray and add the Mixed eggs. Use a spatula to pull in the edges and let the uncooked eggs run onto the hot skillet. do this until the eggs are mostly cooked.

Step 5: Add all the ingredients to one side of the omelet (TT#4 putting the cheese on first allows it to melt before you dig in).

Step 6: use your spatula to get under the sides of the omelet and run the spatula all the way around the edges to make sure it isn't stuck to the skillet.

Step 7: now this is the hardest part. with a plate ready take the skillet and gently shake the omelet onto the plate, once half the omelet is on the plate use the skillet to fold the omelet in half (TT#5 make sure that the half that gets shaken onto the plate is the half with all the ingredients on it).
**Step 7 can get a little tricky so I like to use a slight variation. I use the spatula to turn the bare side of the omelet over onto the other half and placing a plate in the skillet and on top of the omelet I turn the entire skillet over and lift. this places the omelet right on the plate. (Holli Tip#1 always have parental supervision when dealing with hot things).

Step 8: Garnish with Salt, Pepper, and Cheese! Wah-la. You have the perfect omelet!

OH TONY WOULD BE SO PROUD!
